Week #49, Sept. 29, 2015

Hey Mom!  This week went by very fast again!  Im counting the days down until General Conference!! cant wait!  Everything is good.  this week we had lots of miracles. there is the man rual that has come to church like 20 times but hasn't been able to get baptized bc his not wife refuses to get married for some legal issue and he cant leave bc he is 77. BUUUUUT now we realized he has a separate house behind his house where he can live and so he'll be able to be baptized! i'm so happy! and also there is this family that recently has been through a lot.  their baby almost died and its a miracle she is alive and it seems like she will live a healthy life. and bc of that, this woman realized that she needs to be active again and come back to church and work to go to the temple.  and her husband who before didnt' really care to listen to us is now so interested and i love teaching him!  he came to church on Sunday and loved it! his name is david.  its an awesome miracle that happened.  ha there is a phrase here that says nobody fishes us.  also another one, nobody is here or there with us. hahaha basically it means lots of people couldn't care less about who we are and what we have to offer. BUT i really do like being here. and we are seeing really cool miracles here and lots of tender mercies from Heavenly Father.
ha i knew that my bishop friended you on fb. he calls me daily with something new to tell me hahah he is so funny. and his kids are so funny. i think im going to be a great dad because i can get both of them to stop crying at the same time! hahaha. i ate something this week called charquican and OH MAN ITS WONDERFUL.  i wish the Chileans had more good food. haha. but then i think this is a blessing that I'm in a place with crappy food bc i have lost my love to eat and that means maybe i wont be fat when i'm old! ha right now i'm so dead. today we started waking up early bc we go and play basketball with the assistants and elder decker! i suck! but its fun! i drained a 3 on accident nbd. and then we played soccer as a zone today (also terrible at soccer) but thats ok! im looking less pregnant! ha well shoot i just realized i have to get off. i love you mom and hope you are always getting more and more healthy every day! JACOB 6:12 ["Oh be wise, what can I say more?"]  if i could go back and change my mission scripture on the plaque thing it would be that scripture. i say it all the time, its a great reminder! love my family!

Charquican- Chilean Stew

"A hearty Chilean stew that hold a lot of versatility. A good use for 
leftover meat and for using whatever vegetable you have on hand. " 

Ingredients

    • 1 lb meat ( anything left over is good, ground roasted best)
    • 2 ears corn, cut off cob and very finely ground
    • 1 lb assorted fresh vegetable
    • 2 tablespoons lard ( or vegetable oil)
    • 2 cups broth ( beef, chicken, or vegetable)
    • 1 teaspoon oregano
    • chili pepper ( of your choice or cayenne pepper)
    • 8 potatoes, cut into rough chunks
    • 1 onion, chopped
    • 4 -6 eggs ( 1 egg per serving)

Directions

  1. First, fry meat in lard or oil with the onion, corn, chile peppers, salt and oregano.
  2. When the onion is soft, add the potatoes, vegetables and broth.
  3. Let simmer until the vegetables are cooked.
  4. Serve with a fried egg on top of each serving.
